3 Days after we were sealed in the Anchorage, AK temple on our Anniversary I had a tonsillectomy to remove my tonsils. I had chronically inflamed tonsils and would get a deadly strain of strep throat with out fail EVERY YEAR! Turns out that after my surgery they found that I had record size tonsils! I didn't see them, but I can only imagine they were gross. It took me 7 weeks to fully recover. So as soon as I was able to swallow without pain Peter took me to my FAVORITE restaurant, Simon & Seaforts, for our annual celebratory anniversary dinner.

It’s a favorite among Alaskans, and it’s no wonder: the macadamia nut encrusted stuffed halibut at Simon & Seaforts is never on their regular menu, but it’s always on their specials. It’s Anchorage’s best treat. Buttery bites of soft halibut mingle with crunchy macadamias and a savory crab filling; each bite is divine. There is nothing like it. It is my absolute favorite food! If I had to pick a "Last Meal" this would be it. I could die happy.
